My Battenberg is a stuffed cookie that brings a bit of elegance to your biscuit tin without any fuss. I've made a buttery, delicate cookie shell and filled it generously with white chocolate chips mixed into a smooth, creamy filling — there's a lovely almond note running through the whole thing that keeps it feeling a bit special. The cookie itself is crisp on the outside but tender enough to bite through cleanly, and that white chocolate cream filling is rich without being heavy. They're perfect with an afternoon cup of tea, or wrapped up as a gift for someone you want to impress.
This is made fresh for each restock rather than kept in stock. Ordering closes a few days before the bake, and you collect it on the day it comes out of the oven.
